Claude Tillier once said « drink is a necessity of the soul ». We would like to think that our wine brings happiness to friends or family around a table and participates in true moments of pleasure since it is essential for us that our wines respect life, the plants, the earth and the consumer.
For us this clear fact translates into a commitment bio to the domain in its entirety (certified in 2012).
But we have gone beyond this driven by the certitude that the earth must live in order to express itself.
Our objective therefore aims to reinforce the overall ecosystem of the vine so that it establishes its own equilibrium to fight pests and disease.
Regular tasting of the grapes gives the signal to start picking. Since the acquisition of the domain we have favoured hand picking which, in our opinion, ensures a more accurate selection and better preservation of the grapes, and a more satisfactory elimination of the leaves.
Each year therefore a dozen or so pickers join us in perpetuating this ancient tradition.
It might seem that the harvesting is fastidious and difficult but nevertheless a happy atmosphere of friendship, team spirit and conviviality reigns amongst the vines.
The bunches of grapes are collected in small crates to avoid crushing and avert oxidation.
The grapes destined to make white wine are transport in refrigerated lorries to preserve all their freshness.
